New England pizzeria Flatbread Company picks Lower Greenville for first Texas restaurant - The Dallas Morning News

A pizza joint that originated in Massachusetts is expected to open on Dallas’ Greenville Avenue on Jan. 16. It’ll be the first Flatbread Company outside of the New England area, with the exception of two other restaurants far-flung from its home base, in Canada and Hawaii.

Crews have been working on opening the pizza joint on Lower Greenville for much of 2019, having converted a Firestone Tire and Service Center into an expansive restaurant. The tire shop had been at 1720 Greenville Avenue since approximately the early 1950s; before that it operated as a car shop under different names. Firestone took up a prominent piece of the street just north of its intersection with Ross Avenue.

“I guarantee someday we’ll have some little old lady pull up and ask to get her oil changed,” joked Neal Tesseyman, assistant manager for the Dallas restaurant. The space has been reinvented with the former garage in mind, with a patio out front where the parking lot used to be and seven large garage doors that lead into the dining room.

“We’re moving into buildings that mean something to the community,” says Lauren Grindrod, regional manager for the company. She started as a host at a Flatbread Company restaurant 14 years ago and never left.

Flatbread Company has a straightforward menu of salads and thin, crisp-crust pizzas. Two wood-burning ovens are on display in the middle of an open kitchen, and customers can peek inside — and feel the warmth of the fire — as they walk to their tables or to the bar. Kids are welcome.

Flatbread’s pizza dough is made with organic wheat and the company prides itself on simple ingredients like nitrate-free pepperoni and some locally-sourced veggies. Grindrod expects a pie called the Lower Greenville Community to be popular: It’s a cheese pizza topped with caramelized onions and mushrooms.

An exclusive menu item in Dallas is a Buffalo chicken pizza with red onions that comes topped with celery, carrots and ranch dressing.

For dessert, managing partner and Grapevine resident Ashton Lewis hand-picked three local bakeries: Pinch of Salt Pastries will make a gluten-free brownie, Full Circle Bakery will make cookie sandwiches with ice cream, and Sweet & Simple will make a vegan chocolate-coconut bite.

Staffers say their ties with the community are essential.

The restaurant has an earthy vibe, one instilled by founders Jay Gould and Johnny Meehan, who Grindrod describes as “surfers from Hampton” who started slinging pies in 1998. Jason Lyon, the current company president, joined the company in 2016 and has helped accelerate the company’s expansion across North America.

“We really are very picky about our locations,” Grindrod says. “It’s always: Where’s there not great pizza? ... And this area is just so hip and up and coming.”

Flatbread Company, opening Jan. 16, 2020, is located at 1720 Greenville Ave., Dallas.
