'ZZA Pizza + Salad consolidates in St. Louis, expands to Texas - St. Louis Magazine

After an 18-month run, the Central West End location of ‘ZZA Pizza + Salad quietly closed early last week. The restaurant (along with the city’s first Shake Shack and a Kaldi’s Coffee) was located inside the $31 million The Euclid development at 54 N. Euclid, just south of West Pine Boulevard.

On Tuesday, a sign on the door announced a consolidation with the flagship store at 282 N. Skinker, located in the same block as Kayak’s and Bobo Noodle House. So far, there's been no indication of any future plans for the CWE space.

Meanwhile, a licensed location near Austin, Texas, is slated to open next week. "While ’Zza only has this one Texas location in the works for now," Eater recently reported, "[co-owner Ryan] McManus notes that further expansions are likely...within Austin or possibly elsewhere in Texas." 

Pi Pizzeria co-founder Chris Sommers started ‘ZZA Pizza + Salad in 2016. The fast-casual concept is unique in several ways: the oblong pizzas and salads (all priced $9–11) were developed by Cary McDowell, a former fine-dining chef who was brought on as Pi’s corporate executive chef and later assumed the same role at ‘ZZA. The concept delivered what it promised: a handful of inspired pizzas and salads (plus a build-your-own option), prepared with quality ingredients and served in the blink of an eye.

The flagship opened in March 2017 across from Washington University and was included in SLM’s Best New Restaurants of 2017. The second location, located in the CWE, followed in May 2018. Last week, Sommers indicated that another 'ZZA could open in St. Louis this spring as well.

While the reasons for the consolidation are unclear, the  stores are both delivery-centric businesses with delivery area radii that nearly overlap, which had to be a factor. On a broader scale, as the number of restaurant deliveries continues to grow, restaurateurs find themselves not just competing within their own segment (in this case, pizza), but with every restaurant that delivers.
